My sister gave me this recipe for chicken tortilla soup with shredded after she served it at a special party at their house.

Ingredients of chicken tortilla soup recipe:

8 tablespoons Canola oil

5 10″ to 12″ corn tortillas

1 onion

6 garlic cloves

1 small bunch of cilantro

2 - 14.5 oz. cans of diced tomatoes

8 cups chicken stock

14 ounces of canned or frozen corn

3/4 - 1 1/2 Tablespoons ground cumin

1/2 - 1 Tablespoon chili powder

4 bay leaves

4 boneless, skinless chicken breast halves or try thighs

1/2 teaspoon cayenne pepper

Juice from 1 lime

Preparation of chicken tortilla soup recipe:

Dice the onion and mince the garlic.

Wash and towel try the cilantro, remove stems and chop.

Open your cans of tomatoes and have them at the ready. You don’t have to measure out all the spices unless you like the way they have it all ready on the cooking shows.

Rinse the chicken under cold water and dry.

Methods of chicken tortilla soup recipe:

Make this all in one large soup pot or fry the tortilla strips in one and make the soup in another. I like to clean as few pots as possible especially when I’m working one handed. Cut up 2 of the tortillas into 1/4 inch strips and fry them in 3 tablespoons of Canola oil. You want them to be a golden brown but be careful not to burn them, they cook quickly. Depending on the size of your pot, you may have to cook several at time.

Remove the strips from pot and transfer to some paper towels to drain. Season with a little salt.

Heat the remaining oil over medium high heat and sauté the onions for a couple of minutes.

Add garlic and sauté for another minute or two. Tear the remaining 3 corn tortillas into bite size pieces and add to the pot.

Add the cilantro, stir, and cook for a minute more. Add the canned tomatoes with their juice and the chicken stock, cumin, chili powder, and bay leaves and bring to a boil.

Reduce heat to a simmer, add the corn, whole chicken breasts, and cayenne. Simmer the chicken breasts for 15 to 20 minutes until cooked throughout.

Remove the chicken breasts and put aside to cool. Turn off the soup at this point. Once the chicken breasts are cool, shred them with your hands and return to the pot.

Add your lime juice and taste for spiciness. If you like it hotter, add more of the spices. Reheat, and serve with the fried tortilla strips.

My sister usually serves this chicken tortilla soup with the fried tortillas, freshly diced avocado, grated cheddar cheese, and sour cream. The sour cream really helped mellow out some of the spices and gave the soup a wonderful creamy appearance. This soup is a meal.

If time is limited, I always suggest buying a bottle of either already made marinade or salad dressing and marinating the chicken while you’re at work. The flavor seeps into the chicken and when you get home from work, just bake for an hour and you’ll have a delicious flavored chicken.

In this article I’d like to share 2 fruit flavored chicken recipes and one herb flavored recipe. They are Italian Flavored Chicken, Pineapple Flavored Chicken and Apricot Flavored Chicken.

Pineapple Flavored Chicken

3-4 chicken breasts

4 cloves of garlic, minced

½ inch slice of ginger, minced

1 medium sized onion, chopped

1 can evaporated milk

1 can crushed pineapple

½ cup soy sauce

butter for sautéing

Mix together, pineapple, ginger and soy sauce. Marinate chicken in pineapple mixture for 2-3 hours. Saute garlic and onion for a couple of minutes. Add chicken breasts and cover. Cook about 15 minutes. Add marinade to pan and bring to a boil. Cook until done. Once the chicken is done, add the milk, mix and cook a few minutes more.

Italian Flavored Chicken

4 chicken breasts

1/3 cup Italian salad dressing

1 cup parmesan cheese

1 cup Italian bread crumbs

3 large eggs, beaten

Marinate chicken for one hour in Italian dressing. Mix together cheese and bread crumbs. Dip chicken into eggs. Roll chicken in cheese and bread crumb mixture. Pour Italian dressing over chicken and bake for about 45 minutes at 350 degrees.

Apricot Chicken

6 chicken breasts

1 package dry onion soup mix

flour to lightly dust the chicken pieces

1 can apricot nectar

1 can apricot halves

1 small onion, chopped

salt and pepper to taste

Lightly dust the chicken in flour. Place chicken in baking dish. Salt and pepper to taste. Place the chopped onions and soup mix on the chicken breasts. Pour the apricots and nectar over the chicken and bake about an hour at 350 degrees.

I was always frustrated at how I would have to go off route from my 2-hour commute to go buy fast food. My wife is a very difficult eater to please. During the week, my mother in law cooked dinner. My wife never seemed to be satisfied with what she cooked. Every week at least 2 or 3 times she would call me on the way from work so I would by her a grilled chicken Caesar Salad from, of all places, a fast food place. One day I just broke down and tried the sucker. To my surprise, it was good but it definitely would not blow anyone away.

The next time she called, I went to the local supermarket picked up some frozen chicken breasts, Romaine lettuce, a wedge of parmesan cheese, croutons and Briannas Home Style Asiago Caesar dressing. I came home threw the chicken breast in boiling water with some salt and once it was thawed I seared it in a grill pan. I rinsed the lettuce and cut it to the same width as the fast food place. I then tossed the lettuce with the dressing, that’s made with shredded Asiago cheese being careful not to use too much just covering the lettuce. After adding a handful of croutons and shredding some parmesan cheese on top, I had a Chicken Caesar Salad. This all took no more than 20 minutes. After that, I always kept some shredded romaine in water in the fridge and in 15 minutes, I would have the salad done.

This Chicken Caesar Salad recipe also gives you a great starter salad, minus the grilled chicken, you can have done in 5 minutes. My wife is still amazed you can do Chicken Caesar Salad at home so fast. I have a great way to say thanks at home in less than 15 minutes. This simple dish started my search for quick dishes I could prepare after a day’s work.

We should always search for better and faster ways to get from the kitchen to the table in no time. Maximizing the time you spend with your family at dinner and bringing your family closer together.

There are hundreds of ways to prepare chicken. In this article you’ll find recipes for; garlic chicken, mushroom chicken and lemon chicken, 3 very different flavors.

I personally always use chicken breasts, however chicken thighs can almost always be substituted if your preference is dark meat. Since chicken thighs are smaller than chicken breasts increase the number of chicken pieces in any given recipe.

I also prefer the taste of kosher chicken and so never use salt in my recipes as kosher chickens are salted during the processing period. I also always thoroughly wash the chicken and then pat dry prior to beginning the seasoning process.

Garlic Flavored Chicken

4 chicken breasts (you can use either skin on, or skin off chicken pieces)

¼ cup grated parmesan cheese

¼ cup dry bread crumbs

¼ cup olive oil

2 teaspoons crushed garlic

In a sauce pan, combine the garlic and oil. Heat over very low heat so that flavors mix. Combine the bread crumbs and parmesan cheese in a dish that you can roll the chicken pieces in. Generously dip the chicken in the garlic and oil mixture, then roll in the cheese and bread crumb mixture. Bake as you would normally bake chicken, about an hour at 350 degrees.

Note: if you use an oil or bread crumbs that are garlic flavored, your chicken will have additional garlic flavor.

Mushroom Flavored Chicken

4 chicken breasts

1 can cream of chicken soup

2 cans cream of mushroom soup

1 soup can of milk

1/2 tsp. pepper

1/2 tsp. salt

Pour one can of the cream of mushroom soup into a baggie and marinate chicken several hours. Cook chicken about 35 minutes in a 350 degree oven. While chicken is cooking, prepare the sauce. Combine the salt, pepper, milk, cream of chicken soup and the other can of cream of mushroom soup. Mix well. Remove chicken from oven and pour the sauce over the chicken and bake for at least 20 more minutes or until chicken is done.

Note: You can also add cut up mushrooms to the baking pan for additional flavor.

Lemon Chicken

4 chicken breasts

1/3 cup lemon juice

½ cup butter or margarine

½ cup flour

1 clove of garlic, chopped

1 tablespoon minced onion

salt and pepper to taste

Lightly dust chicken with flour. Melt butter and then coat chicken with butter. Put remaining butter in baking dish. Cook for 30 minutes in a 375 degree oven. During cooking, brush chicken with butter a few times.

While the chicken is cooking, prepare the sauce. Mix together the lemon juice, onion, garlic, salt and pepper. Remove chicken from oven and baste with sauce. Cook an additional 25-30 minutes, basting with the sauce a few times during cooking.

I hope you enjoy these 3 different flavors of chicken.

I put this on to cook for the family on a day when I knew I wouldn’t be home for dinner. They ate it all, so I didn’t get a chance to taste it! They said it was really good and they want me to make it again. I definitely will, but I’ll be around to eat it with them this time!

This also really works great for those that have a busy schedule and sometimes don’t have time to make dinner.

You’ll be pleased to know, however, that making sweet and sour chicken does not have to be difficult. Some simple tips can make the whole experience easy and fun. Go ahead to cook it and enjoy!

Ingredients of the sweet and sour chicken recipe:

12 oz (375 g) boneless skinless chicken thighs or breasts

1 tbsp (15 ml) soy sauce

4 tsp (20 ml) cornstarch

1/4 tsp (1 ml) pepper

4 green onions

2 carrots

1 sweet red or yellow pepper

3/4 cup (175 ml) chicken stock

2 tbsp (25 ml) rice or cider vinegar

2 tbsp (25 ml) ketchup

4 tsp (20 ml) granulated sugar

1/4 tsp (1 ml) salt

4 cups (1 l) bean sprouts

2 tbsp (25 ml) vegetable oil

1/3 cup (75 ml) blanched almonds

2 cloves garlic, minced

1/2 tsp (2 ml) sesame oil

Directions of the sweet and sour chicken recipe:

Cut chicken into bite-size pieces. In bowl, mix together chicken, 1 tsp (5 ml) of the soy sauce, 2 tsp (10 ml) of the cornstarch and pepper until chicken is coated. Set aside.

Cut onions into 1-inch (2.5 cm) lengths. Thinly slice carrots. Seed, core and cut red pepper into 1-inch (2.5 cm) chunks. Set aside.

In small bowl, dissolve remaining cornstarch in remaining soy sauce; stir in stock, vinegar, ketchup, sugar and salt until sugar is dissolved. Set aside.

In microwaveable bowl, cover and microwave bean sprouts and 1 tbsp (15 ml) water on high for 3 minutes; drain and transfer to serving plate.

In wok or skillet, heat oil over high heat; stir-fry chicken and almonds, in 2 batches, until lightly browned, about 2 minutes per batch. Remove with slotted spoon; set aside.

Add garlic, green onions, carrots and red pepper to pan; stir-fry just until pepper and carrots are tender, about 3 minutes. Add chicken mixture; stir-fry for 30 seconds. Add stock mixture and bring to boil; cook until thickened and juices run clear when chicken is pierced, about 2 minutes. Stir in sesame oil. Pour over bean sprouts.
